We are looking for a well-experienced Chef De Partie – Curry to work at Sula Indian Restaurant Davie Street located at 1708 Davie St, Vancouver, BC V6G 2K7, Canada.

TASKS AND RESPONSIBILITIES:

  • Take full responsibility for the curry station, planning and directing daily preparation and service of Indian curry dishes during all service periods.

  • Prepare and cook a wide range of Indian curries, including meat, seafood, vegetarian, and vegan dishes, using traditional techniques, gravies, and spice blends.

  • Oversee preparation of core curry components such as base gravies, masalas, sauces, and spice mixtures to ensure consistency across batches and shifts.

  • Plan daily mise en place requirements for the curry section, determining quantities, prep priorities, and timing based on forecasted volume.

  • Supervise and coordinate cooks and kitchen helpers assigned to the curry station, ensuring disciplined workflow and adherence to quality standards.

  • Control cooking temperatures, sequencing, and finishing to ensure curries are executed accurately and synchronized with rice, breads, and tandoor items.

  • Monitor food quality throughout service by tasting, adjusting seasoning, and correcting texture or consistency issues in real time.

  • Enforce standardized recipes, portion sizes, and plating standards to maintain consistency and cost control.

  • Ensure strict compliance with food safety, sanitation, and hygiene regulations, including allergen awareness and safe handling of dairy-based gravies.

  • Train and mentor junior staff on curry preparation techniques, station organization, and quality expectations to maintain consistent execution.
     

 

Prerequisites:

 

Education: Secondary (School) graduation certificate or equivalent.

Experience & Skills: 5 years or more experience in the food industry.

Language: English

 

Hourly Rate: $37.00 to $38.00 for 30 to 40 Hours per week

Starting Date: As soon as possible

Terms of Employment: Fulltime and permanent
