H-Mart Edmonton is looking for an experienced, passionate, and leadership-driven Head Butcher to oversee our fast-paced Meat Department. As the Head Butcher, you will be the backbone of our meat operations, ensuring the highest quality Asian cuts, maintaining exceptional food safety standards, and leading a dedicated team of cutters and clerks.
If you have a deep mastery of whole-meat product and specialized retail butchery, a sharp eye for inventory control, and a knack for team leadership, we want to hear from you.
Key Responsibilities
- Department Leadership: Lead the onboarding and continuous training of apprentices, cutters, and clerks; cross-train staff on specialized cutting techniques, equipment safety, and product knowledge to build a highly skilled team.
- Master Butchery: Expertly cut, trim, bone, and portion various meats (beef, pork, poultry) according to H-Mart standards, including specialized Asian-style cuts (e.g., thin-slicing for hot pot/KBBQ).
- Inventory & Ordering: Monitor stock levels, place orders for raw materials, minimize waste, and implement strategies to meet gross profit margins.
- Merchandising & Sanitation: Ensure all display cases are beautifully merchandised, accurately priced, and consistently rotated following strict FIFO (First-In, First-Out) principles, while maintaining immaculate departmental cleanliness and sanitation standards.
- Food Safety & Compliance: Maintain a spotless workspace; strictly enforce provincial health, safety, and sanitation standards regarding tools, machinery, and meat handling.
Qualifications
- Experience: Minimum of 3 years of professional butchery experience, with a supervisory or leadership role
- Education : Completion of secondary education is required. Completion of a college-level program in culinary management or butchery training is preferred but not mandatory.
- Technical Skills: Expert knife skills and proficiency with commercial meat saws, grinders, and slicers. Knowledge of specialized Asian meat cuts is highly desirable.
- Leadership Style: Strong communication skills, a collaborative mindset, and the ability to motivate a diverse team.
- Physical Capability: Ability to work in a cold environment (refrigerated cutting rooms), stand for extended periods, and lift heavy loads (up to 50+ lbs).
- Availability: Flexible schedule, including weekends and holidays as dictated by retail business needs.
What We Offer
- Compensation: $37.00 – $39.00/hr based on experience plus 4% Vacation fee
- Overtime Pay: Paid overtime in accordance with Alberta employment standards for extra hours worked.
